Ingredients
- 1 cup cooked quinoa
- 1 cup cooked lentils
- 1/2 cup chopped mushrooms
- 1/2 cup chopped onions
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1/4 cup nutritional yeast
- 1/4 cup almond flour
- 1/4 cup chickpea flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 cup olive oil
Instructions
- Preheat the oven to 375°F.
- In a large bowl, mix together the cooked quinoa, cooked lentils, chopped mushrooms, onions, carrots, and celery.
- Add the nutritional yeast, almond flour, chickpea flour, garlic powder, onion powder, dried thyme, dried rosemary, salt, and black pepper to the bowl. Mix well.
- Add the olive oil to the bowl and mix until everything is well combined.
- Form the mixture into small nugget shapes and place them on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, or until the nuggets are crispy and golden brown.
