Ingredients

  • 1 cup cooked quinoa
  • 1 cup cooked lentils
  • 1/2 cup chopped mushrooms
  • 1/2 cup chopped onions
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1/4 cup nutritional yeast
  • 1/4 cup almond flour
  • 1/4 cup chickpea flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil

Instructions

  • Preheat the oven to 375°F.
  • In a large bowl, mix together the cooked quinoa, cooked lentils, chopped mushrooms, onions, carrots, and celery.
  • Add the nutritional yeast, almond flour, chickpea flour, garlic powder, onion powder, dried thyme, dried rosemary, salt, and black pepper to the bowl. Mix well.
  • Add the olive oil to the bowl and mix until everything is well combined.
  • Form the mixture into small nugget shapes and place them on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes, or until the nuggets are crispy and golden brown.
