- 4 medium potatoes, peeled and diced
- 1 bunch of kale, chopped
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of red pepper flakes
- 1/4 cup of vegetable broth
Instructions
- Preheat the oven to 375°F.
- In a large bowl, toss the diced potatoes with olive oil, salt, black pepper, and red pepper flakes.
