Modern Diced Chicken Delight

About this recipe

Experience the freshness of sautéed vegetables combined with tender diced chicken, all brought together in a rich sauce. This dish is crafted using modern cooking techniques to ensure the chicken remains juicy while maximizing the flavors of fresh bell peppers, onions, and tomatoes. Perfect for a healthy weeknight dinner.

Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup diced tomatoes
  • 1/2 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 2 green onions, sliced

Directions

  1. 1

Heat 1 tablespoon olive oil in a large skillet over medium heat.

  2. 2

Season chicken pieces with garlic powder, paprika, salt, and pepper.

  3. 3

Cook chicken in the skillet until golden and cooked through, about 4-5 minutes per side. Remove and set aside.

  4. 4

Add remaining olive oil to the skillet. Sauté bell peppers, onions, and tomatoes until soft, about 5 minutes.

  5. 5

In a bowl, whisk together chicken broth, soy sauce, cornstarch, and water. Pour into the skillet.

  6. 6

Return the chicken to the skillet, stir to coat, and let simmer until the sauce thickens, about 3 minutes.

  7. 7

Garnish with sliced green onions before serving.

  8. 8

Serve hot, possibly over rice or noodles.

Chef's tip

For added texture, consider adding diced zucchini or broccoli. Serve with a side of crusty bread or over a bed of rice to soak up the delicious sauce.
