Ingredients

  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro for garnish

Instructions

  • Wash the basmati rice thoroughly and soak it in water for 30 minutes.
  • Heat oil in a large pan and add cumin seeds. Let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Add ginger-garlic paste and cook for a minute.
  • Add diced tomatoes and cook until they turn mushy.
  • Add mixed vegetables and cook for 5 minutes.
  • Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
  • Drain the soaked rice and add it to the pan. Mix gently.
  • Add 4 cups of water and bring it to a boil.
  • Reduce the heat to low, cover the pan, and let it cook for 15-20 minutes or until the rice is cooked and fluffy.
  • Garnish with fresh cilantro and serve hot.
