Desi Delight: Indian Spiced Rice

About this recipe

Desi Delight is a vibrant and aromatic rice dish that brings together long-grain basmati rice and a blend of traditional Indian spices. Perfect for a weeknight dinner or a festive occasion, this dish is both easy to prepare and packed with flavor.

Ingredients

  • 2 cups basmati rice
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 tomatoes, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 4 cups water
  • Fresh cilantro for garnish

Directions

  1. 1

Rinse and soak the basmati rice in water for 30 minutes. Drain before cooking.

  2. 2

Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.

  3. 3

Add chopped onions and sauté until they turn golden brown.

  4. 4

Stir in ginger-garlic paste and sauté for a minute until fragrant.

  5. 5

Add tomatoes, cooking until they become soft and mushy.

  6. 6

Mix in the vegetables, turmeric powder, red chili powder, garam masala, and salt. Cook for 5 minutes.

  7. 7

Add the drained rice to the pan, gently mixing with the vegetables.

  8. 8

Pour in 4 cups of water, bring to a boil, then lower the heat. Cover and simmer for 15-20 minutes until rice is cooked and fluffy.

  9. 9

Garnish with fresh cilantro and serve hot.

Chef's tip

Make sure to adjust the spices according to your heat preference. This dish pairs well with a cooling cucumber raita.
