Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn kernels
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 tortillas
  • 1 cup shredded cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions

  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the onion, garlic, and bell pepper to the skillet. Cook until the vegetables are softened.
  • Stir in the black beans, diced tomatoes, corn kernels, chili powder, cumin, paprika, salt, and black pepper. Simmer for 10 minutes.
  • Warm the tortillas in a separate skillet or in the microwave.
  • Spoon the beef mixture onto each tortilla. Top with shredded cheese, cilantro, sour cream, and salsa.
  • Roll up the tortillas and serve hot.
