Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup corn kernels
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 tortillas
- 1 cup shredded cheese
- 1/4 cup chopped cilantro
- 1/4 cup sour cream
- 1/4 cup salsa
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the onion, garlic, and bell pepper to the skillet. Cook until the vegetables are softened.
- Stir in the black beans, diced tomatoes, corn kernels, chili powder, cumin, paprika, salt, and black pepper. Simmer for 10 minutes.
- Warm the tortillas in a separate skillet or in the microwave.
- Spoon the beef mixture onto each tortilla. Top with shredded cheese, cilantro, sour cream, and salsa.
- Roll up the tortillas and serve hot.
