About this recipe

Perfect for busy weeknights, this modern chicken stir-fry combines tender chicken with vibrant mixed vegetables in a savory sauce. Quick to prepare and cook, it's a delightful dish that's both nutritious and budget-friendly.

Ingredients

  • 1 lb chicken breast, thinly sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp vegetable oil
  • 2 tbsp cornstarch
  • Salt and pepper to taste

Directions

  1. 1

Toss chicken with cornstarch until well-coated.

  2. 2

Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.

  3. 3

Cook chicken until golden brown and cooked through, about 5-7 minutes. Remove from pan.

  4. 4

In the same pan, add remaining oil and stir-fry vegetables until tender-crisp, about 3-4 minutes.

  5. 5

Add garlic and ginger to vegetables, stir-frying for 1 minute until fragrant.

  6. 6

Return chicken to pan. Stir in soy sauce, oyster sauce, and sesame oil. Stir well to coat.

  7. 7

Cook for an additional 2-3 minutes. Season with salt and pepper.

  8. 8

Serve immediately over steamed rice or noodles.

Chef's tip

For a gluten-free version, use gluten-free soy sauce. Adjust vegetables based on seasonality or preference.
