Ingredients
- 2 eggs
- 1/2 avocado
- 1 cup spinach
- 1/4 cup diced tomatoes
- 1/4 cup diced onions
- Salt and pepper to taste
Instructions
- 1. Heat a non-stick skillet over medium heat.
- 2. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes.
