Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 can diced tomatoes
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the diced onion, minced garlic, bell pepper, zucchini, and mushrooms to the skillet. Cook until the vegetables are tender.
  • Stir in the diced tomatoes, paprika, cumin, chili powder, salt, and pepper. Simmer for 10 minutes.
