Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked chickpeas
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lemon

Instructions

  • Rinse the quinoa under cold water.
  • In a medium saucepan, bring the water to a boil.
  • Add the quinoa and reduce heat to low.
  • Cover and simmer for 15-20 minutes, or until the water is absorbed and the quinoa is tender.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion and garlic and sauté until fragrant.
  • Add the bell pepper, zucchini, cherry tomatoes, and chickpeas.
  • Cook for 5-7 minutes, or until the vegetables are tender.
  • Stir in the cumin, paprika, salt, and black pepper.
  • Add the cooked quinoa to the skillet and mix well.
  • Remove from heat and stir in the parsley, cilantro, and lemon juice.
  • Serve hot and enjoy!
