Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 cup cooked chickpeas
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- Juice of 1 lemon
Instructions
- Rinse the quinoa under cold water.
- In a medium saucepan, bring the water to a boil.
- Add the quinoa and reduce heat to low.
- Cover and simmer for 15-20 minutes, or until the water is absorbed and the quinoa is tender.
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until fragrant.
- Add the bell pepper, zucchini, cherry tomatoes, and chickpeas.
- Cook for 5-7 minutes, or until the vegetables are tender.
- Stir in the cumin, paprika, salt, and black pepper.
- Add the cooked quinoa to the skillet and mix well.
- Remove from heat and stir in the parsley, cilantro, and lemon juice.
- Serve hot and enjoy!
