Ingredients

  • 1 pound boneless chicken thighs, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled queso fresco
  • 1/4 cup sour cream
  • 1 lime, cut into wedges

Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chicken thighs to the skillet and sprinkle with chili powder, cumin, paprika, salt, and black pepper.
  • Cook the chicken for 5-6 minutes per side, or until cooked through.
  • Remove the chicken from the skillet and let it rest for a few minutes.
  • While the chicken is resting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds per side.
  • To assemble the tacos, place a few slices of chicken on each tortilla.
  • Top with shredded lettuce, diced tomatoes, diced red onion, chopped cilantro, crumbled queso fresco, and a dollop of sour cream.
  • Squeeze fresh lime juice over the top of each taco.
