Ingredients
- 1 pound boneless chicken thighs, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/4 cup crumbled queso fresco
- 1/4 cup sour cream
- 1 lime, cut into wedges
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken thighs to the skillet and sprinkle with chili powder, cumin, paprika, salt, and black pepper.
- Cook the chicken for 5-6 minutes per side, or until cooked through.
- Remove the chicken from the skillet and let it rest for a few minutes.
- While the chicken is resting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds per side.
- To assemble the tacos, place a few slices of chicken on each tortilla.
- Top with shredded lettuce, diced tomatoes, diced red onion, chopped cilantro, crumbled queso fresco, and a dollop of sour cream.
- Squeeze fresh lime juice over the top of each taco.
