Ingredients

  • 2 cups pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.
  • In a large mixing bowl, combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Mix well.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  • Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  • If desired, fold in the chopped walnuts and raisins.
  • Pour the batter into the prepared baking dish and spread it evenly.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
