Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup spinach
- 1 cup cherry tomatoes
- 1/2 cup diced cucumber
- 1/4 cup chopped red onion
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- 1. Rinse the quinoa under cold water.
- 2. In a medium saucepan, bring the vegetable broth to a boil.
- 3. Add the rinsed quinoa to the boiling broth and reduce the heat to low.
- 4. Cover the saucepan and let the quinoa simmer for about 15 minutes, or until all the liquid is absorbed.
