Ingredients
- 2 ripe plantains
- 1/4 cup brown sugar
- 1/4 cup butter
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup chopped walnuts
- 1/4 cup raisins
- 1/4 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C).
- Peel the plantains and slice them into 1/2-inch thick rounds.
- In a saucepan, melt the butter over medium heat.
- Add the brown sugar, cinnamon, and nutmeg to the melted butter. Stir until well combined.
- Add the plantain slices to the saucepan and cook for 2-3 minutes on each side, until they are caramelized.
- Remove the plantain slices from the saucepan and place them in a baking dish.
- Sprinkle the chopped walnuts, raisins, and shredded coconut over the plantains.
- Bake in the preheated oven for 15-20 minutes, until the topping is golden brown and crispy.
