Ingredients

  • 2 ripe plantains
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup chopped walnuts
  • 1/4 cup raisins
  • 1/4 cup shredded coconut

Instructions

  • Preheat the oven to 350°F (175°C).
  • Peel the plantains and slice them into 1/2-inch thick rounds.
  • In a saucepan, melt the butter over medium heat.
  • Add the brown sugar, cinnamon, and nutmeg to the melted butter. Stir until well combined.
  • Add the plantain slices to the saucepan and cook for 2-3 minutes on each side, until they are caramelized.
  • Remove the plantain slices from the saucepan and place them in a baking dish.
  • Sprinkle the chopped walnuts, raisins, and shredded coconut over the plantains.
  • Bake in the preheated oven for 15-20 minutes, until the topping is golden brown and crispy.
