Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 avocado, sliced
- Fresh cilantro, for garnish
Instructions
- In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant and translucent.
- Add the bell pepper, zucchini, and mushrooms to the skillet. Cook until the vegetables are tender.
- Stir in the black beans, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Cook for an additional 5 minutes, or until heated through.
- Serve the quinoa and vegetable mixture in bowls. Top with sliced avocado and fresh cilantro.
