Ingredients

  • 1 bunch (about 300 grams) fresh spinach
  • 200 grams paneer, cut into cubes
  • 2 tablespoons ghee or oil, divided
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, puréed
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cream (optional)

Directions

    Blanch the spinach in boiling water for 2 minutes, then drain and blend into a smooth purée.

    Heat 1 tablespoon of ghee in a pan. Add cumin seeds and let them splutter.

    Add chopped onions and sauté until golden brown, then add ginger-garlic paste and sauté for a minute.

    Add tomato purée, green chilies, turmeric, red chili powder, and salt. Cook until the tomato mixture thickens.

    Stir in the spinach purée and simmer for 5 minutes.

    In a separate skillet, heat the remaining ghee and fry the paneer cubes until golden brown. Transfer to a plate.

    Add the fried paneer and garam masala to the spinach mixture. Stir well and cook for 5 minutes.

Chef's tip

For a richer flavor, you can pan-fry the paneer in ghee before adding to the spinach mixture.
