Ingredients

  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 100 grams chicken, sliced
  • 100 grams shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 4 spring onions, chopped
  • Fried shallots, for garnish

Instructions

  • Heat the vegetable oil in a wok or large frying pan over medium heat.
  • Add the onion, garlic, and red chilies. Stir-fry until fragrant.
  • Add the chicken and shrimp. Cook until they are cooked through.
  • Push the ingredients to one side of the pan and add the beaten eggs. Scramble the eggs until they are cooked.
  • Add the cooked rice to the pan. Stir-fry until the rice is heated through.
  • Add the soy sauce, fish sauce, oyster sauce, sugar, salt, and black pepper. Stir-fry for another 2-3 minutes.
  • Add the diced carrot and bell pepper. Stir-fry for another 2 minutes.
  • Remove from heat and garnish with chopped spring onions and fried shallots.
  • Serve hot and enjoy!
