Ingredients
- 2 cups cooked rice
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 1 carrot, diced
- 1 bell pepper, diced
- 100 grams chicken, sliced
- 100 grams shrimp, peeled and deveined
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs, beaten
- 4 spring onions, chopped
- Fried shallots, for garnish
Instructions
- Heat the vegetable oil in a wok or large frying pan over medium heat.
- Add the onion, garlic, and red chilies. Stir-fry until fragrant.
- Add the chicken and shrimp. Cook until they are cooked through.
- Push the ingredients to one side of the pan and add the beaten eggs. Scramble the eggs until they are cooked.
- Add the cooked rice to the pan. Stir-fry until the rice is heated through.
- Add the soy sauce, fish sauce, oyster sauce, sugar, salt, and black pepper. Stir-fry for another 2-3 minutes.
- Add the diced carrot and bell pepper. Stir-fry for another 2 minutes.
- Remove from heat and garnish with chopped spring onions and fried shallots.
- Serve hot and enjoy!
