Ingredients
- 1 cup lentils
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 1 can tomato sauce
- 2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups macaroni
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
Instructions
- In a large pot, heat some oil over medium heat.
- Add the onion, garlic, and bell pepper. Cook until softened.
- Add the lentils, diced tomatoes, tomato sauce, vegetable broth, chili powder, cumin, paprika, salt, and black pepper. Stir well.
- Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes, or until the lentils are tender.
- While the lentil chili is simmering, cook the macaroni according to package instructions. Drain and set aside.
- Once the lentil chili is done, stir in the cooked macaroni.
- Serve hot, topped with shredded cheddar cheese and chopped fresh cilantro.
