Ingredients

  • 1 cup lentils
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups macaroni
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large pot, heat some oil over medium heat.
  • Add the onion, garlic, and bell pepper. Cook until softened.
  • Add the lentils, diced tomatoes, tomato sauce, vegetable broth, chili powder, cumin, paprika, salt, and black pepper. Stir well.
  • Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes, or until the lentils are tender.
  • While the lentil chili is simmering, cook the macaroni according to package instructions. Drain and set aside.
  • Once the lentil chili is done, stir in the cooked macaroni.
  • Serve hot, topped with shredded cheddar cheese and chopped fresh cilantro.
