Ingredients

  • 1 cup brown rice
  • 1 tablespoon olive oil
  • 1 cup mukimame (edamame)
  • 1 medium carrot, sliced
  • 1 stalk celery, chopped
  • 1/2 ear of corn, kernels removed
  • 1 tablespoon chia seeds
  • 2 cups spinach
  • 1 small square of low-fat cheddar cheese
  • Salt and pepper to taste

Directions

    Rinse the brown rice under cold water until the water runs clear.

    Combine rice with 2 cups of water in a pot; bring to boil.

    Reduce heat, cover, and simmer the rice for about 30 minutes until tender.

    While rice cooks, slice carrot and chop celery; remove corn kernels from cob.

    In a pan, sauté mukimame, carrot, celery, and corn in olive oil for about 7 minutes.
