- 1 ripe banana
- 1 scoop of protein powder
- 1/2 cup of oats
- 1/4 cup of almond milk
- 1/4 teaspoon of cinnamon
- 1/4 teaspoon of vanilla extract
- 1/4 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 tablespoon of honey (optional)
- 1 tablespoon of coconut oil (for cooking)
Instructions
- In a mixing bowl, mash the ripe banana until smooth.
- Add the protein powder, oats, almond milk, cinnamon, vanilla extract, baking powder, salt, and honey (if using). Mix well until all ingredients are combined.
- Heat a non-stick skillet or griddle over medium heat and add the coconut oil.
- Pour 1/4 cup of the pancake batter onto the skillet and spread it into a round shape.
- Cook for 2-3 minutes, or until bubbles start to form on the surface of the pancake.
- Flip the pancake and cook for an additional 2-3 minutes, or until golden brown.
- Repeat with the remaining batter.
- Serve the protein pancakes warm with sliced bananas, a drizzle of honey, and a sprinkle of cinnamon.
