Ingredients
- 2 cups of whole wheat noodles
- 1 cup of mixed vegetables (carrots, bell peppers, broccoli)
- 1/2 cup of sliced mushrooms
- 1/4 cup of low-sodium soy sauce
- 2 tablespoons of sesame oil
- 1 tablespoon of minced garlic
- 1 tablespoon of grated ginger
- 1 tablespoon of honey
- 1 tablespoon of cornstarch
- 1/4 cup of water
- Optional toppings: sliced green onions, sesame seeds
Instructions
- 1. Cook the whole wheat noodles according to package instructions. Drain and set aside.
- 2. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and cook for 1-2 minutes until fragrant.
- 3. Add the mixed vegetables and sliced mushrooms to the skillet. Cook for 5-7 minutes until the vegetables are tender.
- 4. In a small bowl, whisk together the low-sodium soy sauce, honey, cornstarch, and water. Pour the sauce into the skillet and stir well to coat the vegetables.
- 5. Add the cooked noodles to the skillet and toss to combine with the vegetables and sauce. Cook for an additional 2-3 minutes until everything is heated through.
