Ingredients
- 1 lb mushrooms
- 1 onion
- 2 cloves garlic
- 1 bell pepper
- 1 zucchini
- 1 carrot
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1 cup cooked quinoa
- Fresh parsley for garnish
Instructions
- 1. Slice the mushrooms, onion, garlic, bell pepper, zucchini, and carrot.
- 2. Heat olive oil in a large skillet over medium heat.
- 3. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.
- 4. Add the onion, garlic, bell pepper, zucchini, and carrot to the skillet. Cook for another 5 minutes, until the vegetables are tender.
