  • 1 zucchini
  • 1 carrot
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 cup cooked quinoa
  • Fresh parsley for garnish

Instructions

  • 1. Slice the mushrooms, onion, garlic, bell pepper, zucchini, and carrot.
  • 2. Heat olive oil in a large skillet over medium heat.
