Ingredients
- 2 large eggplants
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the eggplants into 1/2-inch thick rounds.
- Place the eggplant slices on a baking sheet and brush both sides with olive oil. Season with salt and pepper.
- Bake the eggplant slices for 15-20 minutes, or until they are tender and slightly browned.
- While the eggplant is baking, heat the remaining olive oil in a large skillet over medium heat.
- Add the onion and garlic to the skillet and cook until they are softened and fragrant, about 5 minutes.
- Add the bell peppers and zucchini to the skillet and cook for an additional 5 minutes, or until they are tender.
- Stir in the cherry tomatoes, dried oregano, dried basil, salt, and pepper. Cook for another 2 minutes.
- Remove the eggplant slices from the oven and top each slice with the vegetable mixture.
- Sprinkle the grated Parmesan cheese over the top of each slice.
- Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve the healthy eggplant delight warm and enjoy!
