Ingredients

  • 2 large eggplants
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  • Preheat the oven to 400°F (200°C).
  • Slice the eggplants into 1/2-inch thick rounds.
  • Place the eggplant slices on a baking sheet and brush both sides with olive oil. Season with salt and pepper.
  • Bake the eggplant slices for 15-20 minutes, or until they are tender and slightly browned.
  • While the eggplant is baking, heat the remaining olive oil in a large skillet over medium heat.
  • Add the onion and garlic to the skillet and cook until they are softened and fragrant, about 5 minutes.
  • Add the bell peppers and zucchini to the skillet and cook for an additional 5 minutes, or until they are tender.
  • Stir in the cherry tomatoes, dried oregano, dried basil, salt, and pepper. Cook for another 2 minutes.
  • Remove the eggplant slices from the oven and top each slice with the vegetable mixture.
  • Sprinkle the grated Parmesan cheese over the top of each slice.
  • Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Serve the healthy eggplant delight warm and enjoy!
