Ingredients
- 2 ripe bananas
- 1/4 cup honey
- 1/4 cup coconut oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup Greek yogurt
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the bananas with a fork.
- Add the honey, coconut oil, eggs, and vanilla extract to the mashed bananas. Mix well.
- In a separate bowl, whisk together the whole wheat flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the Greek yogurt and chopped walnuts.
- Pour the batter into the greased loaf pan and smooth the top with a spatula.
