Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 cup broccoli florets
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 tablespoon soy sauce
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- 1. Rinse the quinoa under cold water and drain.
- 2. In a medium saucepan, bring the vegetable broth to a boil.
- 3. Add the quinoa to the saucepan, reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
- 4. In a large skillet, heat the olive oil over medium heat.
- 5. Add the onion and garlic to the skillet and sauté until fragrant.
- 6. Add the bell pepper, zucchini, mushrooms, broccoli, cherry tomatoes, and spinach to the skillet.
- 7. Cook the vegetables until they are tender-crisp.
- 8. In a small bowl, whisk together the soy sauce, cumin, paprika, salt, and pepper.
- 9. Pour the sauce over the vegetables and stir to coat evenly.
- 10. Add the cooked quinoa to the skillet and stir to combine.
- 11. Cook for an additional 2-3 minutes to heat everything through.
- 12. Serve hot and enjoy!
