Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 tablespoon soy sauce
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  • 1. Rinse the quinoa under cold water and drain.
  • 2. In a medium saucepan, bring the vegetable broth to a boil.
  • 3. Add the quinoa to the saucepan, reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
  • 4. In a large skillet, heat the olive oil over medium heat.
  • 5. Add the onion and garlic to the skillet and sauté until fragrant.
  • 6. Add the bell pepper, zucchini, mushrooms, broccoli, cherry tomatoes, and spinach to the skillet.
  • 7. Cook the vegetables until they are tender-crisp.
  • 8. In a small bowl, whisk together the soy sauce, cumin, paprika, salt, and pepper.
  • 9. Pour the sauce over the vegetables and stir to coat evenly.
  • 10. Add the cooked quinoa to the skillet and stir to combine.
  • 11. Cook for an additional 2-3 minutes to heat everything through.
  • 12. Serve hot and enjoy!
