Ingredients
- 2 pounds beef stew meat, cut into cubes
- 2 tablespoons olive oil
- 4 large onions, sliced
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 cup dry red wine
- 1 cup beef broth
- 2 bay leaves
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 cinnamon stick
- Salt and pepper to taste
- 8-10 pearl onions, peeled
- 2 tablespoons red wine vinegar
- 1 tablespoon all-purpose flour

Pat dry beef cubes with paper towels and lightly dust with flour.

Heat olive oil in a large pot over medium heat. Brown beef in batches, then remove.

In the same pot, sauté onions and garlic until soft.

Add red wine, beef broth, red wine vinegar. Bring to a simmer.

Return beef to pot with bay leaves, oregano, thyme, cinnamon, and pearl onions. Season with salt and pepper.
