Ingredients

  • 2 pounds beef stew meat, cut into cubes
  • 2 tablespoons olive oil
  • 4 large onions, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 cup dry red wine
  • 1 cup beef broth
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cinnamon stick
  • Salt and pepper to taste
  • 8-10 pearl onions, peeled
  • 2 tablespoons red wine vinegar
  • 1 tablespoon all-purpose flour

    Pat dry beef cubes with paper towels and lightly dust with flour.

    Heat olive oil in a large pot over medium heat. Brown beef in batches, then remove.
