- 2 pounds beef stew meat, cut into cubes
- 2 tablespoons olive oil
- 4 onions, sliced
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 cup red wine
- 1 cup beef broth
- 2 bay leaves
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 cinnamon stick
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the sliced onions and minced garlic. Cook until the onions are soft and translucent.
- Add the tomato paste and stir well to coat the onions and garlic.
- Pour in the red wine and beef broth. Stir to combine.
- Return the beef to the pot and add the bay leaves, dried oregano, dried thyme, and cinnamon stick. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the beef is tender and the flavors have melded together.
