Ingredients
- 2 green plantains
- 4 cloves of garlic
- 1/4 cup of olive oil
- 1/4 cup of pork rinds
- Salt to taste
Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- In a large pot, bring water to a boil and add the plantain slices. Cook for about 15 minutes or until the plantains are tender.
- While the plantains are cooking, peel and mince the garlic cloves.
- In a frying pan, heat the olive oil over medium heat. Add the minced garlic and cook until golden brown.
- Remove the plantains from the pot and drain them. Transfer them to a large bowl.
- Using a mortar and pestle or a food processor, mash the plantains until they form a smooth consistency.
- Add the cooked garlic and pork rinds to the mashed plantains. Mix well.
- Season with salt to taste.
- Shape the mixture into small balls or patties.
- In the same frying pan used for the garlic, heat some more olive oil over medium heat.
- Fry the mofongo balls or patties until golden brown on both sides.
