Ingredients

  • 2 green plantains
  • 4 cloves of garlic
  • 1/4 cup of olive oil
  • 1/4 cup of pork rinds
  • Salt to taste

Instructions

  • Peel the plantains and cut them into 1-inch thick slices.
  • In a large pot, bring water to a boil and add the plantain slices. Cook for about 15 minutes or until the plantains are tender.
  • While the plantains are cooking, peel and mince the garlic cloves.
  • In a frying pan, heat the olive oil over medium heat. Add the minced garlic and cook until golden brown.
  • Remove the plantains from the pot and drain them. Transfer them to a large bowl.
  • Using a mortar and pestle or a food processor, mash the plantains until they form a smooth consistency.
  • Add the cooked garlic and pork rinds to the mashed plantains. Mix well.
  • Season with salt to taste.
  • Shape the mixture into small balls or patties.
  • In the same frying pan used for the garlic, heat some more olive oil over medium heat.
  • Fry the mofongo balls or patties until golden brown on both sides.
