Ingredients
- 8 ounces linguine
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup white wine
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound scallops
- 1/2 pound mussels, cleaned and debearded
- 1/2 pound clams, cleaned
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook the linguine according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the white wine to the skillet and bring to a simmer. Cook for 2-3 minutes to reduce the wine slightly.
- Stir in the heavy cream and bring to a simmer. Cook for 5 minutes, or until the sauce has thickened slightly.
- Add the Parmesan cheese to the skillet and stir until melted and smooth.
- Add the shrimp, scallops, mussels, and clams to the skillet. Cook for 5-7 minutes, or until the seafood is cooked through and the mussels and clams have opened.
- Stir in the chopped parsley and season the sauce with salt and pepper to taste.
- Add the cooked linguine to the skillet and toss to coat in the sauce.
- Serve the creamy seafood linguine hot, garnished with additional Parmesan cheese and parsley if desired.
