Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced red onion
- 1/4 cup chopped fresh parsley
- 1 lemon, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the salt, black pepper, garlic powder, paprika, dried thyme, dried oregano, and cayenne pepper.
- Rub the chicken breasts with olive oil, then sprinkle the spice mixture evenly over both sides of the chicken.
- Place the chicken breasts on a baking sheet and arrange the cherry tomatoes, red onion, and lemon slices around them.
- Bake for 20-25 minutes, or until the chicken is cooked through and the tomatoes are slightly roasted.
- Remove from the oven and let the chicken rest for a few minutes before serving.
- Garnish with chopped fresh parsley and serve hot.
