Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 2 tablespoons laksa paste
  • 400ml coconut milk
  • 500ml chicken or vegetable stock
  • 200g rice noodles
  • 200g cooked chicken, shredded
  • 100g prawns, peeled and deveined
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Fresh coriander, chopped
  • Bean sprouts, for garnish
  • Lime wedges, for serving

Instructions

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the onion, garlic, and ginger, and cook until softened.
  • Stir in the laksa paste and cook for another minute.
  • Pour in the coconut milk and stock, and bring to a simmer.
  • Add the rice noodles and cook until tender.
  • Add the cooked chicken and prawns, and cook until heated through.
  • Stir in the fish sauce, soy sauce, and lime juice.
  • Serve the laksa hot, garnished with fresh coriander, bean sprouts, and lime wedges.
