Ingredients
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 thumb-sized piece of ginger, grated
- 2 tablespoons laksa paste
- 400ml coconut milk
- 500ml chicken or vegetable stock
- 200g rice noodles
- 200g cooked chicken, shredded
- 100g prawns, peeled and deveined
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Fresh coriander, chopped
- Bean sprouts, for garnish
- Lime wedges, for serving
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion, garlic, and ginger, and cook until softened.
- Stir in the laksa paste and cook for another minute.
- Pour in the coconut milk and stock, and bring to a simmer.
- Add the rice noodles and cook until tender.
- Add the cooked chicken and prawns, and cook until heated through.
- Stir in the fish sauce, soy sauce, and lime juice.
- Serve the laksa hot, garnished with fresh coriander, bean sprouts, and lime wedges.
