Ingredients
- 2 carrots, sliced
- 1 swede, diced
- 200g tempeh, cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1/4 cup vegetable broth
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together soy sauce, sesame oil, ginger, garlic, cornstarch, and vegetable broth. Set aside.
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add tempeh and cook until golden brown, about 5 minutes. Remove from skillet and set aside.
- In the same skillet, add carrots and swede. Cook for 5-7 minutes, until vegetables are tender.
- Return tempeh to the skillet and pour the sauce mixture over the vegetables and tempeh.
- Stir well to coat everything in the sauce. Cook for an additional 2-3 minutes, until the sauce has thickened.
- Season with salt and pepper to taste.
