Ingredients

  • 2 carrots, sliced
  • 1 swede, diced
  • 200g tempeh, cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1/4 cup vegetable broth
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together soy sauce, sesame oil, ginger, garlic, cornstarch, and vegetable broth. Set aside.
  • Heat vegetable oil in a large skillet or wok over medium heat.
  • Add tempeh and cook until golden brown, about 5 minutes. Remove from skillet and set aside.
  • In the same skillet, add carrots and swede. Cook for 5-7 minutes, until vegetables are tender.
  • Return tempeh to the skillet and pour the sauce mixture over the vegetables and tempeh.
  • Stir well to coat everything in the sauce. Cook for an additional 2-3 minutes, until the sauce has thickened.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!
