Ingredients

  • 2 cups broken rice
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 carrots, sliced
  • 1 cup frozen peas
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 4 green onions, chopped

Instructions

  • 1. Cook the broken rice according to package instructions. Set aside.
  • 2. Heat vegetable oil in a large skillet over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  • 3. In the same skillet, add the onion, garlic, bell peppers, carrots, and peas. Cook until vegetables are tender, about 5 minutes.
  • 4. In a small bowl, whisk together soy sauce, oyster sauce, fish sauce, sesame oil, sugar, and black pepper. Pour the sauce over the vegetables and stir to combine.
  • 5. Add the cooked chicken back to the skillet and stir to coat with the sauce. Cook for an additional 2-3 minutes.
