About this recipe

This Broken Rice Chicken Delight offers a bright and flavorful take on a classic dish, featuring tender chicken and vibrant vegetables combined with aromatic broken rice. Inspired by both Vietnamese and traditional Asian cooking, this dish provides a delightful blend of textures and tastes, perfect for a satisfying weeknight meal.

Ingredients

  • 2 cups broken rice
  • 1 lb chicken breast, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 carrots, julienned
  • 1 cup frozen peas
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon brown sugar
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 4 green onions, sliced

Directions

  1. 1

Cook the broken rice according to package instructions and set aside.

  2. 2

Heat vegetable oil in a large skillet over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.

  3. 3

In the same skillet, sauté onion and garlic until fragrant. Stir in bell peppers, carrots, and peas, cooking until vegetables are tender, about 5 minutes.

  4. 4

Whisk together soy sauce, oyster sauce, fish sauce, sesame oil, sugar, and black pepper in a small bowl.

  5. 5

Return chicken to the skillet and pour the sauce over the mixture, stirring to combine. Cook for an additional 2-3 minutes.

  6. 6

Serve the dish over broken rice, and garnish with sliced green onions.

Chef's tip

Consider substituting chicken with tofu for a vegetarian option.
