Ingredients
- 2 cups broken rice
- 1 lb chicken breast, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 carrots, sliced
- 1 cup frozen peas
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 4 green onions, chopped
Instructions
- 1. Cook the broken rice according to package instructions. Set aside.
- 2. Heat vegetable oil in a large skillet over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- 3. In the same skillet, add the onion, garlic, bell peppers, carrots, and peas. Cook until vegetables are tender, about 5 minutes.
- 4. In a small bowl, whisk together soy sauce, oyster sauce, fish sauce, sesame oil, sugar, and black pepper. Pour the sauce over the vegetables and stir to combine.
- 5. Add the cooked chicken back to the skillet and stir to coat with the sauce. Cook for an additional 2-3 minutes.
- 6. Serve the broken rice topped with the chicken and vegetable mixture. Garnish with chopped green onions.
