About this recipe

This modern twist on Chicken Parmigiana delivers juicy, crispy chicken topped with a rich marinara sauce and gooey melted cheese. Ideal for a family dinner or entertaining guests, this dish pairs beautifully with a side of pasta or a fresh garden salad.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil
  • Olive oil for frying

Directions

  1. 1

Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper.

  2. 2

Prepare an assembly line with flour, beaten eggs, and breadcrumb mixture including Parmesan, oregano, basil, garlic powder, salt, and black pepper.

  3. 3

Dredge each chicken breast in flour, dip in eggs, and coat with breadcrumb mixture.

  4. 4

Heat olive oil in a skillet over medium heat. Brown each chicken breast for 3 minutes per side until golden.

  5. 5

Transfer chicken to prepared baking sheet. Top each breast with marinara sauce and mozzarella cheese.

  6. 6

Bake in the oven for 14 minutes. Broil on high for 1 additional minute to brown the cheese.

  7. 7

Remove and allow to rest for a few minutes. Garnish with fresh basil before serving.

Chef's tip

For best results, ensure the oil is hot before frying the chicken to achieve the desired crispiness.
