Ingredients

  • 2 cups water
  • 1 cup mukimame (edamame)
  • 1 tablespoon chia seeds
  • 1 small square of cheddar cheese (preferably low-fat)
  • 1 medium carrot, sliced
  • 1 stalk celery, chopped
  • 1/2 ear of corn, kernels removed
  • 2 cups spinach (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Directions

    Rinse the brown rice under cold water until the water runs clear.

    Combine rice and water in a pot and bring to a boil.
