Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 2 cups fresh berries (strawberries, blueberries, raspberries)
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup whipped cream
Instructions
- In a large mixing bowl, combine the flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add the ice water, one tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a separate bowl, combine the berries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
- Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim any excess.
- Pour the berry mixture into the pie crust and spread it evenly.
- Bake the pie in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
- Remove the pie from the oven and let it cool for at least 1 hour before serving.
- Serve the pie with a dollop of whipped cream on top.
