About this recipe

This kid-friendly berry pie is a scrumptious treat that combines a flaky crust with a sweet and tangy berry filling. It's easy to make and sure to be a hit with children and adults alike. Serve it with a dollop of whipped cream for an extra special dessert.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup ice water
  • 2 cups fresh mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream for serving

Directions

  1. 1

In a large mixing bowl, combine flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.

  2. 2

Add ice water gradually, mixing until dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

  3. 3

Preheat the oven to 375°F (190°C).

  4. 4

In a bowl, combine berries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well.

  5. 5

Roll out chilled dough on a floured surface to fit a 9-inch pie dish. Transfer to dish and trim excess.

  6. 6

Pour berry mixture into crust, spreading evenly.

  7. 7

Bake for 40-45 minutes until crust is golden and filling is bubbly.

  8. 8

Remove from oven and cool for 1 hour before serving with whipped cream.

Chef's tip

Using fresh berries enhances the flavor and texture of the pie. Ensure the pie cools completely before slicing to allow the filling to set properly.
