Ingredients

  • 250 grams dried pasta
  • 2 tablespoons extra-virgin olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 150 grams mushrooms, sliced
  • 400 grams can of diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Salt and freshly ground black pepper to taste
  • 60 grams grated Parmesan cheese

Directions

    Boil a large pot of salted water and cook pasta one minute less than package instructions. Reserve a cup of pasta water and drain.

    Heat olive oil in a large skillet over medium heat. Sauté garlic and onions until soft.

    Add bell pepper and mushrooms to the skillet, and cook until mushrooms are golden.
