Ingredients

  • 2 pounds fresh tomatoes
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 medium carrot, grated
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped

    Score an 'X' on the bottom of each tomato and boil in a pot of water for 1 minute. Transfer to ice water, peel skins, then chop.
