Ingredients

  • 1 cup lentils
  • 2 chicken breasts
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chicken broth
  • 2 tablespoons olive oil

Instructions

  • 1. Rinse the lentils under cold water and set aside.
  • 2. Heat olive oil in a large pot over medium heat.
  • 3. Add the diced onion, minced garlic, carrot, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
  • 4. Push the vegetables to one side of the pot and add the chicken breasts. Cook until browned on both sides, about 4-5 minutes per side.
  • 5. Add the cumin, paprika, turmeric, salt, and black pepper to the pot. Stir to coat the chicken and vegetables with the spices.
  • 6. Pour in the chicken broth and add the rinsed lentils. Stir to combine.
  • 7. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 30-40 minutes, or until the lentils are tender and the chicken is cooked through.
  • 8. Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot and stir to combine.
  • 9. Serve the lentil chicken hot, garnished with fresh herbs if desired.
