Ingredients

  • 4 large bell peppers
  • 1 cup quinoa, rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 cup diced tomatoes
  • 1/2 cup shredded Mexican blend cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Directions

    Preheat the oven to 375°F (190°C).

    Slice the tops off the bell peppers and remove seeds and membranes.

    Cook quinoa as per package instructions.

    In a bowl, mix cooked quinoa, black beans, corn, tomatoes, cheese, cumin, chili powder, salt, and pepper.

    Fill the bell peppers with the mixture and place in a baking dish.

    Cover with foil and bake for 25 minutes, then remove foil and bake another 5 minutes until cheese melts.
