- 1 pound ground pork
- 1/4 cup ice water
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground mace
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground caraway seeds
- 1/4 teaspoon ground marjoram
- 1/4 teaspoon ground thyme
- 1/4 teaspoon ground sage
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground paprika
- 1/4 teaspoon ground cayenne pepper

Instructions
- In a large bowl, combine the ground pork, ice water, salt, black pepper, white pepper, nutmeg, ginger, coriander, mace, cardamom, caraway seeds, marjoram, thyme, sage, allspice, cloves, cinnamon, paprika, and cayenne pepper. Mix well until all the spices are evenly distributed.
- Prepare the hog casings by rinsing them thoroughly under cold water. Place one end of the casing on a sausage stuffer nozzle, and slowly feed the casing onto the nozzle, leaving a few inches of casing hanging off the end.
- Fill the sausage stuffer with the pork mixture, and slowly push the mixture into the casing, allowing the casing to fill up evenly. Twist the sausage into links of desired length, and tie off the ends.
- Bring a large pot of water to a boil. Add the sausages, and cook for about 20 minutes, or until the internal temperature reaches 160°F (71°C).
- Remove the sausages from the pot, and let them cool for a few minutes. Serve hot with your favorite mustard and sauerkraut.
