Ingredients

  • 1 lb boneless chicken thighs, trimmed
  • 1 cup soy sauce
  • 1/2 cup honey
  • 1 tbsp sriracha sauce
  • 1 red bell pepper, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 cups cooked jasmine rice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions

  1. 1

Pat chicken thighs dry and trim excess fat.

  2. 2

Mix soy sauce, honey, and sriracha in a bowl. Marinate chicken for 30 minutes.

  3. 3

Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs until golden brown, about 5 minutes per side.

  4. 4

Add bell pepper, onion, garlic, and ginger to the skillet. Sauté until vegetables are tender.

  5. 5

Reduce heat to low and pour remaining marinade into the skillet. Simmer for 5 minutes until sauce thickens.

  6. 6

Serve chicken and vegetables over a bed of jasmine rice. Garnish with fresh herbs if desired.

Chef's tip

Ensure chicken reaches an internal temperature of 165°F for safety. Adjust sriracha for desired spice level.
