  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped spinach

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together the garlic powder, paprika, dried oregano, salt, and pepper.
