- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup quinoa
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup chopped spinach
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the garlic powder, paprika, dried oregano, salt, and pepper.
