Ingredients
- 1 lb. boneless, skinless chicken breasts
- 1 tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 can (14.5 oz.) diced tomatoes
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned on both sides, about 5 minutes per side.
- Remove chicken from skillet and set aside.
- Add onion and garlic to skillet and cook until softened, about 5 minutes.
- Add bell peppers and cook for an additional 5 minutes.
- Stir in diced tomatoes, oregano, basil, salt, and black pepper.
- Return chicken to skillet and spoon tomato mixture over chicken.
- Bake in preheated oven for 25-30 minutes, or until chicken is cooked through.
- Garnish with chopped parsley before serving.
