Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 can (14.5 oz.) diced tomatoes
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  • Preheat oven to 375°F.
  • Heat olive oil in a large skillet over medium heat.
  • Add chicken and cook until browned on both sides, about 5 minutes per side.
  • Remove chicken from skillet and set aside.
  • Add onion and garlic to skillet and cook until softened, about 5 minutes.
  • Add bell peppers and cook for an additional 5 minutes.
  • Stir in diced tomatoes, oregano, basil, salt, and black pepper.
  • Return chicken to skillet and spoon tomato mixture over chicken.
  • Bake in preheated oven for 25-30 minutes, or until chicken is cooked through.
  • Garnish with chopped parsley before serving.
