Ingredients

  • 1 cup strong brewed coffee, cooled
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract
  • 1 package dairy-free ladyfingers
  • 1 1/2 cups dairy-free cream cheese
  • 1/2 cup coconut cream
  • 2 tbsp maple syrup
  • Cocoa powder for dusting

Instructions

  • In a shallow dish, mix the cooled coffee, coconut sugar, and vanilla extract.
  • Quickly dip each ladyfinger into the coffee mixture, making sure not to soak them too long.
  • In a separate bowl, beat the dairy-free cream cheese, coconut cream, and maple syrup until smooth.
  • In a serving dish, layer the soaked ladyfingers followed by a layer of the cream cheese mixture. Repeat layers until all ingredients are used, ending with a layer of the cream cheese mixture on top.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Before serving, dust the top with cocoa powder.
