- 2 ripe bananas
- 1 apple, grated
- 1 cup oats
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1/4 cup almond butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup dairy-free chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Add the grated apple, oats, almond flour, maple syrup, almond butter, vanilla extract, cinnamon, and salt to the bowl. Mix well until all the ingredients are combined.
- If desired, fold in the dairy-free chocolate chips.
- Using a tablespoon or cookie scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
