  • 2 ripe bananas
  • 1 apple, grated
  • 1 cup oats
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup dairy-free chocolate chips (optional)

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mash the ripe bananas with a fork until smooth.
  • Add the grated apple, oats, almond flour, maple syrup, almond butter, vanilla extract, cinnamon, and salt to the bowl. Mix well until all the ingredients are combined.
  • If desired, fold in the dairy-free chocolate chips.
  • Using a tablespoon or cookie scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
  • Bake for 12-15 minutes, or until the edges are golden brown.
