Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 can diced tomatoes
  • 1 can black beans, rinsed and drained
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  • In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
  • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant and translucent.
  • Add the red bell pepper, zucchini, and mushrooms to the skillet. Cook until the vegetables are tender.
  • Stir in the diced tomatoes, black beans, cumin, paprika, chili powder, salt, and pepper. Cook for an additional 5 minutes to allow the flavors to meld together.
  • Serve the vegetable mixture over the cooked quinoa. Garnish with fresh cilantro.
