Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup spinach, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  • 1. Rinse the quinoa under cold water.
  • 2. In a medium saucepan, bring the vegetable broth to a boil.
  • 3. Add the quinoa to the boiling broth, reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
  • 4. In a large skillet, heat the olive oil over medium heat.
  • 5. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent.
  • 6. Add the diced bell pepper, zucchini, and mushrooms to the skillet and cook until the vegetables are tender.
  • 7. Stir in the can of diced tomatoes, dried oregano, dried basil, salt, and pepper.
  • 8. Simmer the mixture for 10 minutes to allow the flavors to meld together.
  • 9. Add the cooked quinoa and chopped spinach to the skillet and stir until well combined.
  • 10. Cook for an additional 5 minutes to heat everything through.
  • 11. Serve hot, garnished with grated Parmesan cheese.
