Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup spinach, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- 1. Rinse the quinoa under cold water.
- 2. In a medium saucepan, bring the vegetable broth to a boil.
- 3. Add the quinoa to the boiling broth, reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
- 4. In a large skillet, heat the olive oil over medium heat.
- 5. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent.
- 6. Add the diced bell pepper, zucchini, and mushrooms to the skillet and cook until the vegetables are tender.
- 7. Stir in the can of diced tomatoes, dried oregano, dried basil, salt, and pepper.
- 8. Simmer the mixture for 10 minutes to allow the flavors to meld together.
- 9. Add the cooked quinoa and chopped spinach to the skillet and stir until well combined.
- 10. Cook for an additional 5 minutes to heat everything through.
- 11. Serve hot, garnished with grated Parmesan cheese.
