Ingredients

  • 1 cup steel cut oats
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can diced tomatoes
  • 1 can chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  • In a large pot, sauté the onion and garlic until softened.
  • Add the curry powder, cumin, coriander, turmeric, and cayenne pepper and cook for 1-2 minutes until fragrant.
  • Add the steel cut oats, diced tomatoes, chickpeas, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally, until the oats are tender and the liquid has been absorbed.
  • Stir in the cilantro and season with salt and pepper to taste.
  • Serve hot and enjoy!
