Curry Steel Delight
A delicious and hearty curry dish made with steel cut oats instead of rice or noodles.

- 1 cup steel cut oats
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can diced tomatoes
- 1 can chickpeas, drained and rinsed
- 2 cups vegetable broth
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- In a large pot, sauté the onion and garlic until softened.
- Add the curry powder, cumin, coriander, turmeric, and cayenne pepper and cook for 1-2 minutes until fragrant.
- Add the steel cut oats, diced tomatoes, chickpeas, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally, until the oats are tender and the liquid has been absorbed.
- Stir in the cilantro and season with salt and pepper to taste.
