Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon curry powder
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F. Grease and flour a 9-inch cake pan.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, and curry powder.
  • In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  • Add flour mixture to butter mixture in three parts, alternating with milk and vanilla extract, beginning and ending with flour mixture.
  • Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Let cake cool in pan for 10 minutes before transferring to a wire rack to cool completely.
