Ingredients
- 2 lbs goat meat, cut into bite-sized pieces
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 can coconut milk
- 1 cup chicken broth
- 1 tbsp tomato paste
- 1 tbsp brown sugar
- 1 tbsp vegetable oil
- Salt and pepper, to taste
Instructions
- In a large bowl, mix together the curry powder, cumin, coriander, turmeric, paprika, and cayenne pepper.
- Add the goat meat to the bowl and toss to coat evenly with the spice mixture.
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
- Add the onion, garlic, and ginger and sauté until softened, about 5 minutes.
- Add the goat meat to the pot and brown on all sides, about 5 minutes.
- Stir in the coconut milk, chicken broth, tomato paste, and brown sugar.
- Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 2-3 hours or until the goat meat is tender.
- Season with salt and pepper to taste.
- Serve hot with rice and peas.
