Ingredients

  • 2 lbs goat meat, cut into bite-sized pieces
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 cups chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil
  • Salt and freshly ground black pepper, to taste
  • Fresh thyme sprigs (optional)

Directions

    Mix curry powder, cumin, coriander, turmeric, paprika, and cayenne in a large bowl.

    Heat oil in a Dutch oven over medium-high. Sauté onion, garlic, and ginger for 5 minutes.
