Ingredients

  • 2 lbs goat meat, cut into bite-sized pieces
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil
  • Salt and pepper, to taste

Instructions

  • In a large bowl, mix together the curry powder, cumin, coriander, turmeric, paprika, and cayenne pepper.
  • Add the goat meat to the bowl and toss to coat evenly with the spice mixture.
  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  • Add the onion, garlic, and ginger and sauté until softened, about 5 minutes.
  • Add the goat meat to the pot and brown on all sides, about 5 minutes.
  • Stir in the coconut milk, chicken broth, tomato paste, and brown sugar.
  • Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 2-3 hours or until the goat meat is tender.
  • Season with salt and pepper to taste.
  • Serve hot with rice and peas.
