Ingredients
- 1 bag of tortilla chips
- 1 can of black beans, drained and rinsed
- 1 cup of shredded cheddar cheese
- 1/2 cup of diced tomatoes
- 1/4 cup of diced red onion
- 1/4 cup of chopped cilantro
- 1/4 cup of sour cream
- 1 tablespoon of chipotle powder
- 1 tablespoon of olive oil
Instructions
- Preheat the oven to 350 degrees F.
- In a large bowl, mix together the black beans, diced tomatoes, red onion, cilantro, and chipotle powder.
- Spread the tortilla chips in a single layer on a baking sheet.
- Drizzle the olive oil over the chips.
- Sprinkle the shredded cheese over the chips.
- Spoon the black bean mixture over the cheese.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes.
- Drizzle the sour cream over the top of the nachos.
